Peanut butter coconut protein balls

I don't know about you, but I'm a girl who needs to eat every three hours!  It's a tricky one when during my busy days on the road reporting, I don’t know where I’ll be from one hour to the next.  I always need to have some emergency sustenance tucked away in my handbag.

I like to snack on protein, but I need a little sweetness too!  I took the best bits from all my favourite blogs and recipe books to make my own protein balls (amazeballs I call them!).  They have my favourite mix of salty and sweet and they’re also really good for you.  The ingredients are all organic. 

I freeze the balls and carry them in a little container so they stay cool all day.

For me being healthy is about planning, boring I know, but these protein balls are not!

Protein Balls
  • 1/2 cup peanut butter 
  • 3 tbs organic honey
  • 1/4 cup shredded coconut
  • 1/3 cup protein powder
  • 2 tbs plain steel cut oats 
  • 6 dates
Pop all ingredients in a blender to mix, roll into little balls and sprinkle with coconut. Store in the fridge.  The consistency can vary with the types of peanut butter you choose, so if they're too sticky, add protein powder and if they're not sticky enough, add a little more honey and peanut butter.
